Keep in mind that most warranties are "product" warranties. Leakage because it was nt installed properly would not be covered under the warranty anyway.
Most "snap lock" standing seams are recommended for use down to 3:12 pitch. Field-seamed products often are recommended for pitches down as low as 1/2:12.

Given your location, you are probably going to have to utilize a "field seamed" standing seam panel. Florida wind uplift requirements are high so this type of panel is usually the only type strong enough to resist the uplift. Several "field seamed" panels can be installed as low as 1/4 to 12 roof slope. However, in heavy rainfall locations, such as yours, you may want to stay at 1/2 to 12 or higher. Panel warranties involve finish and, perhaps, weathertightness. Finish warranties have some exclusions because of ponding water. The lower the roof slope, the greater the chance for a ponding water problem to occur so this is another reason to keep your slopes above 1/2 to 12. Consult your proposed panel manufacturer for specific regarding panel selection and panel type given your roof slope limitations. Also inquire regarding warranty ramifications because of the slope, and perhaps, where your structure is located.
