Hello,
I am about to have a steel roof installed on a new house useing 16" 26 ga. standing seam panels. The house is all steel framing (light ga.) Will be using 7/16 OSB for decking.
What would be the best underlayment to use? Polypropalene, rubber? Is there something that will seal when the screws pass through during installation?

Polypropylene is probably cheapest but you could cover the roof in a suitable ice and water shield type material that is self-sealing.
Check with the manufacturer on the panel and they will have approved options for you to choose from.
The self-sealing option is nice but probably unnecessary.
