Help. We're thinking of replacing our wood shake roof with a metal one. The problem is that we're seriously concerned about heat and sound conduction. We built a custom barn with a metal roof 10 years ago and the heat under the roof in the summer is unbearable (we live in southern california) and everything that bounces on that roof echos in the barn. Should we request some sort of special insulation for sound and some sort of reflective coating added to the underside to help deflect the heat, and if so what?

Typical residential construction is drastically different from a barn. The insulation, attic space, and ventilation of residential construction address the issues you raise.
In fact, metal roofing is widely recognized as being "cool". See www.coolmetalroofing.com for more details.
I have lived and worked under numerous metal roofs and never had a noise issue.
