I'm building a new house and would like a metal roof. I'd like to be able to hear the rian hit the roof. What kind of underlaying would I need in order not to deafen the noise?

In most cases, the noise is deadened by attic space and insulation.
You might wish to bring this question up with the manufacturer of your roofing to see what ideas they have for you to be able to accomplish your goalk with their product.
