One of the nice things about metal roofing is the wide variety of product types. Included in the wide variation are choices for base metal and coatings. Metal roofing ultimately derives its corrosion resistance form the base metal and from any metallic, paint, or other coatings applied to that metal.
As an example, metals like aluminum and copper can be very good for coastal applications due to their rust resistance. However, high quality steels with such things as G90 galvanized coatings or AZ 50 or AZ 55 galvalume coatings can also provide good corrosion resistance. Add a quality paint or other coating to that and you have even added durability.
Here's my suggestion: keep an open mind as to what product you might choose. Investigate some products you like and check into their warranties for coastal applications and also feel free to contact the manufacturers and ask them about their feelings on coastal applications.

Our 6 unit building has green mansard metal roof approximately 7 years old. We are wanting to paint it black. What can we expect for wear/tear being on the Gulf of Mexico and please suggest what procedure we should follow.

Generally, an airdry finish will never last as long as the original finish. Also, UV is very harsh on dark colors like black.
I would power wash the existing and then apply a quality primer such as Sherwin Williams Pro-Cryl followed by a quality top coat.
