How hot can it get immediately under dark stone coated metal roofing or dark colors of painted metal roofing in desert climates? How about near the beach in Los Angeles?

I do not know of any specific studies of this. However, metal roofing is actually much cooler than most people assume.
Many of today's residential products, especially the stone coated products, have an airspace between the metal and the underlayment, to create a cool roof system. Additionally, some products now use reflective coatings (even in dark colors) to help with energy efficiency.
I am not quite sure of the reason for your question. Perhaps you are considering what sort of underlayment to use? If so, and if this is a metal roof where the metal has a lot of contact with the underlayment, you should use a slip sheet on top of the underlayment or use one of the newer synthetic underlayments which act as a slip sheet and withstand higher temperatures.

Your answer seems to imply that metal roofs of any kind are hot in sunny climates. It
would seem then that a metal roof will make my home hotter in summer than it already
is. I would think a slip sheet on the underlayment would cost more. How would a
metal roof work on top of shingles regarding temperature?

All surfaces absorb or reflect heat dependant on the reflectivity and emissivity. Metal typically has better reflectivity which can be enhanced with reflective pigments. Metal does however transmit heat faster than the other heavily body materials. This is a benefit when it comes time to emitt the heat back out.
Asphalt shingles have low reflectivity but good emmissivity. Hence they absorb a lot more heat and it is not uncommon for the underside of the plywood deck to be 15 degrees hotter than the top.
If you lay any roofing material over asphalt shingles you will transmit heat down through. You must provide adequate ventilation to disperse the heat.

if I use galvanized metal as the roof of my deck with nothing but a frame to hold it, would it be hotter than fiberglass panels? The deck will be used in the hot weather.
