First of all, I would suggest installing a matching drip edge with the roofing. The drip edge will lead into the gutter and make the overhang of the roofing rather irrelevant.
Next, make sure that the roofing is installed per its manufacturer's instructions. Most products will be installed with little or no overhang beyond the eave fascia.
