I read the ingredients on one of the patina kits and kind of made my own out of copperas sulfate (found at the hardware store in plumbing area) and household ammonia. I brushed it on some copper trellises and it aged the copper. I would certainly try it on a scrap piece first though!

I have heard that, when applying such a mixture, it is better to try to apply three or so light coats rather than one heavy coat. This supposedly helps in obtaining a more uniform and even appearance as the end result.

Various rubber membrane tapes and other materials can be used. There are also numerous good anti-corrosive coatings.

The felt underlyment helps protect the decking from condensation which might occur beneath the copper from time to time.
The red rosin paper is to keep the copper from sticking to the felt.
An option to felt/red rosin paper is a layer of one of the newer polymer underlayments such as Titanium, Tri-Flex, RoofTopGuard, or Sharkskin

I would like to know what others have paid per sq foot for copper roof and what was put UNDERNEATH. I have a ranch and need additional insulation. ALso, I have a wood shake roof and need to make sure tha depth of the roof stays the same so I can run the roof into my pre-existing soldered copper gutters...finally...what finishes are available in copper? mY shake roof is grayish...

I do not know of any copper that is supplied in its "brown" stage. However, there are chemicals that can be applied after installation to cause this. Do a Google search on copper patina chemicals. Of course, eventually, the copper will turn green.
If you want to maintain the brown look, you will probably need to look for a pre-finished steel or aluminum roof rather than for copper.

As far as installation and insulation ... what can be done is based upon the design of each individual product. I suggest you find some products you like and then work with their manufacturers to find a suitable installation and assembly method.
THere are ways to build up roof levels with, as you said, various rigid insulation boards, other recovery boards, or decking. Again, there will be various requirements from product to product which you will need to look into.
Copper is available natural which will develop brown and then green patina over time. Also, chemicals can be applied to advance the patina and make it happen immediately. There are also coatings to prevent patina but they are tough to apply, control, and maintain.
There is pre-patinated (green) copper available as well as copper with a silver-gray alloyed metal coating on its surface.
There are pre-finished steel and aluminum roofing panels available in a full range of colors.

I want to know what is available to give the copper roof look an two sindow roofs that are "puffed" out, they look more like half circles puffed out over the windows rather than the normal swayed back down version done over most alcoves etc... and we don't want the green run-off that comes from the aging of copper and getting wet as our house is white stucco, is there a meatal easy to bend that looks like copper that will not do this?

This sounds like something that would have to be custom-formed but yes aluminum and steel are both available in pre-painted colors to look like copper patina.
