This is a pretty broad question as firstly there are many differant types of stainless steel that will provide differant performance levels.
The same again for the base steel. If you are referring to the metalic coating alone, two types are used, Galcvanized and Galvalume, and they are offered in various thicknesses.
An AZ50 Galvalume is an alloy and will last 2-6 times longer than its G90 equivelent in an exposed environment.
Next you can get steel roofing prefinished with various coatings depending on the style. The Kynar 500 smooth and the granular coatings are expected and typically warrantied for 25 years alone.
Next is the thickness. The metalic and paint coatings protect the main areas however the thinner the steel core, the longer the sheet steel will last from edge protection. Again this is dependant on panel choice as some have no exposed edges.
Last I guess is the environment. In Arizona for example, the metalic coated sheet steel will last seemingly forever.
