Is it true that Galvalume roofing cannot come into contact with mortar/concrete - I have a brick and stucco house that along with switching to a metal I roof would like to limewash the brick. I live in Southern New England

Cement does have potential for being corrosive to metal. However, I have rarely seen this be a problem. My guess is it is most likely to be a problem in areas that have catalysts present such as moisture between the two materials or salt. I have seen folks, where metal and masonry must connect, use a coating or a separator paper to keep the two apart. That is certainly not a bad safeguard.

Green or uncured cement/mortar is corrosive to Galvalume due to the high pH. Once cured it is not an issue. As for the lime wash, I would suggest doing the wash before you install the new roof. Again the high pH of the lime could leave stains on the Galvalume panels.
