I have this same issue. Would one solution be to add a facia board to the gable to space the edge of the gable trim far enough out so that the inner/overlapping edge doesn't touch the rib?

I would suggest a gable trim that sits on top of the rib. On any gables not with a rib, use a Z Cleat to use the same gable trim at the same height and have everything look uniform.
