I have a 20’x20’ metal carport that was converted to a workshop. It is fully enclosed and insulated. The roof has 20’ horizontal metal panels attached to the structure’s metal frame. The underside of the panels are sprayed with 3” of closed cell spray foam for insulation and to prevent condensation. The horizontal panels have ridges and water pools up on the ridges when it rains. My concern is the longevity of the roof and water eventually leaking due to ponding. Is it possible to run 2x4 perlins horizontally and then attach vertical metal panels to the My end goal is to convert the horizontal panels to vertical panels.

I am not sure how much weight it can handle but the basics of what you describe are probably feasible so long as there is no curvature to the roof. Curvature would make things much more difficult.
Also, if you do this, I would make sure that you do it in a way so that wind can't get between the two layers of roofing.
